I love eggs for breakfast, but I do sometimes get tired of my classic fried eggs. Sweet Potato Breakfast Hash came as a result of feeling like we needed something different. If I am planning on serving Sweet Potato Hash for a weekday breakfast, I usually will prep ahead of time by cutting up the sweet potatoes the night before while making supper.
- 2 Tbsp. butter
- 1 small onion
- 5 slices turkey bacon
- 8 c. sweet potatoes, peeled and cut into small cubes
- 4 c. egg whites
- ½ c. lowfat cheddar cheese, shredded
- Fry onions and sweet potatoes in butter until potatoes are cooked through. Crumble bacon into mixture and pour egg whites over all. Cook, stirring every few minutes, until eggs are thoroughly cooked. Remove from heat and sprinkle on cheese.
When I buy bacon, I usually get several packages and spend a morning frying it all up so that it is ready when I need to pull some out to use in a recipe. Just make sure you hide it in the back of the fridge so it doesn’t disappear before you need it!
Sweet Potato Breakfast Hash was created as a result of my love of roasted sweet potatoes. I had been making somewhat of a version of this as a side dish for dinners, but it seemed perfect for breakfast. We don’t normally eat white potatoes, so it is nice to have sweet potatoes as an alternative in hash. The combination of flavors may sound a bit odd, but I think you’ll love it!
