We love Green Eggs and Ham, both the book and the breakfast! I’m not sure how many copies of the book have been loved to pieces in our home. There is a local café that Mark and I sometimes enjoy going to for a date and that was the place I originally had a breakfast like this one. It was so good (and fun!) that I came home and replicated a family – size recipe. Here ya go.
Green Eggs and Ham (serves about 9)
1 cup cooked, diced ham
3 dozen eggs
1 Tbsp. pesto
2 large handfuls of fresh spinach
1/2 c. cheddar cheese, grated
Lightly fry ham for a few minutes in a big skillet. Add the eggs, spinach and pesto. Cook thoroughly. (Spinach will wilt fairly quickly.) Sprinkle with cheese while still hot. Note: I served the kids on whole wheat toast if they wanted it.)
